Coconut chocolate chip cookies
Ingredients:
- 2 sticks room temperature butter
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 1/4 cup flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 eggs
- 2 teaspoons vanilla
- 2 cups chocolate chips
- 1 cup, plus a little extra, shredded coconut
Directions:
- Preheat oven to 350 degrees
- Combine flour, baking soda and salt
- Cream together butter and both sugars until lightened in color
- Add eggs and vanilla to butter/sugar mixture and combine
- Slowly add dry ingredients to butter/sugar mixture
- Once combined add chocolate chips and 1 cup coconut
- Scoop out dough using an ice cream scoop for uniformity
- Roll each cookie in coconut and place on baking sheet
- Bake for 13-15 minutes until slightly golden
- Cool and enjoy!
